One thing that doesn’t change with the seasons is the importance of incorporating more leafy greens into our diets. That is why I want to share a deliciously easy green juice with you to make any time of the year.
The good thing is that we dont have to feel stuck eating salads for the rest of our life. Phew! There are plenty of other ways to include greens through whole and raw foods, powders, smoothies, or juices.

I’m glad I decided to plant a vegetable garden this summer because it helped me eat more leafy greens like the ones listed:
- curly kale
- romaine lettuce
- celery
- green bell pepper
- poblano pepper
- yellow squash
- tomatoes
- aromatic herbs
This endeavor led me to make a deliciously easy green juice that doesn’t require a fancy juicer; this recipe is made in a high-speed blender, giving you the option to strain the liquid or leave the pulp as is. Here is a quick video rundown of the process:
INGREDIENTS:
1 cup kale
1 medium green apple, cored
half a medium cucumber, roughly chopped
2 celery sticks, roughly chopped
½ cup pineapple (fresh or frozen)
½ lemon
1 1/2 cups of liquid (water or juice)
optional: fresh mint or ginger
INSTRUCTIONS:
Place all ingredients in blender in the order listed, and blend until smooth.
